HEALTHY AND COLOURFUL SANDWICH PACKED WITH VEGGIES

PREPARATION

Cut the bell pepper and cucumber into small cubes.
Peel the apple and carrot, and cut them into small, even cubes or grate the carrot.
Chop the cauliflower florets a bit finer and chop the parsley.
Place the vegetable cubes, apple, blanched peas, and herbs in a mixing bowl. Add the vinegar and olive oil, and mix.
Slice the sandwiches open and spread the cottage cheese on the bottom. Spoon the vegetable mixture onto the cottage cheese and place the top of the bread on it.
The final step is to enjoy!
